Sakuragi's Omakase course consists of a total of 10 menus, including appetizers, sashimi, grilled and stewed dishes, small pot dishes (nabe), and dessert. Each dish is prepared freshly with ingredients selected by the chef every day at Toyosu Market, and focuses on bringing out the natural savory flavors of the ingredients. In particular, the broth boasts a deep flavor by boiling high-quality Makurazaki katsuobushi and kelp immediately after the guest arrives, and in particular, the "smoked katsuo (smoked bonito)" is Sakuragi's signature menu, grilled over straw fire, and is a popular dish that is always loved regardless of the season.
