Michelin-Recognized,
Kaiseki 'Tsukumo(白)''
Tsukumo (白) is a 2-Michelin-starred restaurant in Nara, the ancient capital of Japan, and is conveniently located near JR Nara Station. Chef Nishimoto, who honed his skills in Kyoto, New York, and London, was fascinated by Nara, the land of Japanese history, and opened his own restaurant here.
Tsukumo (白)'s menu establishes its own unique style that inherits tradition but is not bound by it. We are pursuing new flavors by combining local ingredients with the elements of temple cuisine and truffles.
Tsukumo (白) is a place where you can taste modern and sophisticated cuisine that transcends genres and boundaries.

The story of the 2-Michelin-starred restaurant
'Tsukumo(白)'
Tsukumo (白) is a Japanese restaurant in the ancient capital of Nara, and the restaurant's name combines various ideas to create its current meaning.
In Japan, '白 (white)' is generally pronounced as the Chinese character 'Shiro', which includes 'purity', 'clearness', 'holiness', and 'the spirit of nothingness'. By choosing this Chinese character, we are giving the restaurant a simple and pure image. Also, 'Tsukumo' means 'ninety-nine (99)', and it contains the meaning of appealing to the beauty of imperfection, which is the essence of Japanese culture.
'白' contains the meaning of completeness and perfection. On the other hand, 'ninety-nine' is very close to completion and perfection, but it is not perfect. At '白', we strive for perfection every day, but there is always room for improvement and we do not reach the perfect 100. In Japanese culture, this is a precious concept and a concept that requires humility in daily life.
Chef 'Nishimoto' of Tsukumo (白)

Chef Nishimoto, who worked in New York, England, and Kyoto, completed a 3-year term as the first head chef of the fine dining restaurant 'Kajitsu' in 2009. In 2012, he was invited to participate in the 3-day culinary summit Fusion held in Madrid, and the time he spent abroad has had a great influence on the Japanese yet culturally unique food that the chef prepares today.
