메밀을 손으로 반죽하고, 나무 롤러로 펴고, 칼로 일정한 간격으로 썰어 국수면을 만드는 과정이 정말 재미있었다. 다만, 레인지 후드를 늦게 작동시켜서 튀김으로 발생한 흄 때문에 눈이 많이 따가웠다. 환기 또는 배기를 잘 해주면 좋겠다.

at a handmade soba restaurant

The experience takes place at Mondo, a handmade soba restaurant near Miyanosawa Station on the Sapporo Subway Tozai Line, and lasts about 1 hour 30 minutes. You will go through the whole soba-making process, from making the buckwheat dough and rolling it out to cutting the noodles to an even thickness. The soba makers will assist you carefully, so even first-timers can join without worry.

Enjoy "soba-mae" with tempura and Hokkaido sake

In Japan, there is a custom of enjoying sake before eating soba, known as "soba-mae." Taste two Hokkaido-limited sakes recommended by a licensed sake taster, together with tempura made by a Japanese chef. Ordering soba and tempura together is also a popular combination in Japan.

Finish your meal with the soba you made

After enjoying soba-mae, finish your meal by tasting the soba you made yourself. You can experience the full flow of a Japanese meal, from tempura and sake to soba, all at once.
