What kind of cuisine is kaiseki?

Kaiseki is a traditional Japanese course meal where each dish is served in a set order. It's often served at Japanese restaurants in luxury hotels or ryotei (料亭), high-end Japanese restaurants, and is often served at banquets and company dinners. The use of high-quality ingredients often emphasizes seasonality.

At first glance, it seems similar to omakase, right? Unlike omakase, where the menu's types and order can change at the chef's discretion, kaiseki adheres to a set format, rules, and course flow.
