What Kind of Cuisine is Kaiseki?

Kaiseki is a traditional Japanese course meal where dishes are served one by one in a set order. It is often served at Japanese restaurants in luxury hotels or at high-end restaurants (ryotei) that serve Japanese cuisine, and is often eaten at banquets or company dinners. High-quality ingredients are used to emphasize seasonality.

It looks similar to omakase at first glance, right? Unlike omakase, where the type and order of the menu can change flexibly depending on the chef's judgment, kaiseki has a difference in that it adheres to a certain form, rules, and course flow.
