In Tokyo's fiercely competitive Azabu-Juban district, teeming with Michelin-starred restaurants, Sushi Fujinami, which burst onto the scene like a comet, is a space embodying the spirit of its young owner-chef, Takahiro Fujinami. His story can be summarized as a never-ending quest for the fundamentals and a passion for finding his own unique style.
Chef Fujinami has mastered the essence of Edomae sushi for over a decade, working at world-class sushi restaurants like Sushi Saito and Sushi Arai. Under the guidance of these masters, he honed his craft, learning the aging techniques that bring out the natural flavor of fish and the perfect harmony with shari (rice).
And in 2023, he finally opened his eponymous restaurant, "Sushi Fujinami," carrying on the teachings of his masters while also presenting his own bold and unique sushi. His unwavering dedication to using the finest ingredients, and his meticulous attention to detail—from the temperature of the shari to the seasoning and even the firmness of his grip—instills a deep sense of trust in the gourmets who visit.
