Sushi Shutatsu, a hidden counter omakase tucked away in a quiet alley, is just a short walk from Ogikubo Station. The artisan, with over 30 years of experience from renowned sushi establishments, crafts each piece using seasonal seafood sourced daily from Toyosu Market and premium tuna from Yamayuki. You can even savor rare cuts like the 'noten,' which accounts for only about 0.5% of a tuna, as a highlight. The sushi rice is made with Hatsushimo rice from Gifu Prefecture, with the vinegar blend of white and red rice adjusted to complement the toppings and season. The signature Sushi x Japanese Tea Pairing Course features over four types of premium teas, including Gyokuro and Kenjo Sencha, curated in collaboration with a 200-year-old tea house, enhancing the umami flavors even without alcohol.
