Make sushi and enjoy a Japanese meal at Gyoan Senjojiki, a ryotei (traditional Japanese restaurant) in Wakamatsu, Kitakyushu, founded in 1969. After strolling through the Japanese garden and the adjacent coastline, you watch an expert chef's demonstration and hand-press nigiri sushi with the day's seasonal fish. You start with the basic hand movements using practice ingredients, and the chef stays by your side, so even first-timers can join comfortably. Your handmade sushi is served with dishes prepared by the ryotei, such as chawanmushi and tempura. The experience is timed around sunset, so you can dine at a relaxed pace surrounded by a serene garden.

Enjoy a sushi-making class and a Japanese meal at Gyoan Senjojiki, a ryotei founded in 1969. Unlike strict traditional sushi bars, the atmosphere is relaxed and casual, so anyone can join with ease. The whole experience takes about 2.5–3 hours and is timed around sunset.

When you arrive at the entrance, kimono-clad staff welcome you to the beat of a traditional taiko drum. Staff then guide you through the spacious Japanese garden and out to the adjacent coastline for about 20–30 minutes. You can feel the traditional Japanese atmosphere while hearing about the history of Gyoan Senjojiki.
Along with the expert chef's demonstration, you learn about the fresh seasonal fish and ingredients selected for the day. You first practice the basic hand-pressing techniques with practice ingredients, then make nigiri with fresh seafood once you feel comfortable. The lesson lasts about 60 minutes, and the chef supports you step by step, so it is easy even for beginners.

Arrange your finished sushi and take commemorative photos, then enjoy a leisurely 60–90 minute meal with dishes prepared by the ryotei. The menu includes 8 pieces of nigiri and 1 hosomaki (thin sushi roll) you made, chawanmushi (savory steamed egg custard), aradaki (fish simmered in a sweet soy glaze), a meat dish, seasonal tempura and dessert.
※ The Kokura Hotel Transfer & Night View Plan stops at Takatoyama Observation Deck (about 20 minutes by car from Senjojiki) for about 10 minutes on the way back.
※ It gets completely dark outside after sunset, so please be careful on your way back.
