While varying by dish, Thai cuisine generally features savory, spicy, and sour flavors, enhanced by a unique aroma from various spices.
Regional Thai food characteristics include: Southern Thailand, influenced by its hot and humid climate, has developed preserved foods for flood and drought preparedness, with generally salty and spicy dishes. Northeastern Thai food rarely uses coconut milk and relies on fermented fish sauce as a seasoning; it's known as the spiciest Thai cuisine and is popular among Koreans. Northern Thai cuisine primarily uses salt as a seasoning and features many dishes made with curry, being less spicy compared to other regions.
